Easy Vegetable Chips Recipe

Do you like savoury snacks like I do? Homemade vegetable chips are a really easy and healthy alternative to traditional snack foods. I make them all the time with whatever vegetables I have in the house or can find on sale. Any sturdy root vegetable makes great chips, including sweet potato, beets, carrots, parsnips and turnips.  These little yummies are perfect lightly salted, but feel free to experiment with your favourite herbs and spices. Enjoy them alone or use them to scoop up guacamole, hummus or other dips.  This is a great way to get some extra veggies into your family’s diet!

  • Beets
  • Carrots
  • Turnip
  • Parsnip
  • Or other favourite root vegetables

  1. Thinly slice sweet potatoes, beets, carrots and other root veggies as desired using a mandoline slicer.
  2. Toss with olive oil and season with sea salt or other spices as desired.
  3. Bake in batches on a baking rack set over a baking sheet at 375F until the edges are crisp; about 15 minutes depending on the size of your vegetables.
  4. Allow to cool. They will crisp up a little more as they cool off.

Experiment with different types of salt, such as sea salt and Himalayan pink salt, as well as fresh and dried herbs to suit your family's taste.
